Grilled Galiba Grouper Recipe – Just in time for National Seafood Month!

Ingredients
  1. 4 (8 to 10 x. each) grouper fillets
  2. 3 Tbsp. GALIBA seasoning
  3. 4 Tbsp. Extra virgin olive oil
  4. 2 green onions, chopped
  5. 1 lemon, juiced
  6. 2 Tbs. red bell pepper, chopped (garnish)
  7. 1 Tbsp. black olives, chopped (garnish)
Instructions
  1. Place grouper fillets in a shallow dish. In a small bowl, combine remaining ingredients except red bell pepper and olives. Mix well. Pour half of the GALIBA marinade over the grouper. Let stand for 10 minutes. Preheat grill for 5 minutes on high heat, reduce heat to medium. Place fillet on grill and cook 4-5 minutes on each side. Baste both sides with remaining GALIBA marinade while cooking. Remove from heat and sprinkle red bell pepper and black olives over fillets.

Ingredients
  1. 1 Teaspoon canola oil
  2. 2 Tablespoons Instant Gourmet Grande Southwest seasoning, divided
  3. 1/2 Teaspoon black pepper, divided
  4. 2 Pounds pork tenderloin, trimmed and cut into 1 inch pieces
  5. 2 Cups onion, chopped
  6. 2 Tablespoons jalapeno peppers, chopped and seeded (about 1)
  7. 1/2 Cup dry white wine
  8. 3 Cups chicken stock
  9. 2 Teaspoons dried oregano
  10. 1 Teaspoon ground cumin
  11. 2 Cups tomatillo green chile salsa
  12. 1/2 Cup fresh cilantro, chopped
  13. Lime wedge, for garnish
Instructions
  1. Heat oil in large Dutch oven over medium-high heat. Sprinkle 1 tablespoon Instant Gourmet Grande Southwest seasoning and 1/2 teaspoon black pepper over pork tenderloin. Place pork in pan and cook 8 minutes, or until browned. Remove pork from pan.
  2. Add oinion, garlic and jalapeno pepper to pan and saute for 5 minutes. Return pork to pan. Deglaze pan by adding dry white wine and scraping up any browned bits. Add remaining 1 tablespoon Instant Gourmet Grande Southwest seasoning, 1/2 teaspoon black pepper, chicken stock, oregano, cumin and tomatillo green chile salsa. Bring to boil, cover and cook for 15 minutes. Right before serving, stir in cilantro and garnish with lime wedges. Serve with crispy tortilla chips.

Ingredients
  1. 1 large onion
  2. 1/2 cup butter
  3. 1/4 cup flour
  4. 2 tablespoons Dip-Idy Dill Dip Mix
  5. 1 teaspoon oregano
  6. 1/2 teaspoon dill seed
  7. 1/4 teaspoon pepper
  8. 2 14.5 oz. cans diced tomatoes
  9. 2 14 oz. cans chicken broth
  10. 1/4 cup honey
  11. 1-1/2 cups cream or half & half
Instructions
  1. Sauté onion in butter. Add flour and spices. Stir in tomatoes and chicken broth. Bring to a boil. Simmer for 15 minutes. Add honey and cream. Heat thoroughly but do not boil.
