October is officially National Seafood Month – who would have thought? Why is National Seafood Month important? This is what NOAA has to say about it:

October is National Seafood Month, a time to highlight smart seafood choices, sustainable fisheries, and the health benefits of eating a diet rich in seafood. It’s also an opportunity to illustrate U.S. fisheries successes and challenges as we turn the corner on ending overfishing and begin to rebuild fish stocks. There are amazing stories to tell.

Ingredients
  1. 4 (8-10) Mahi Mahi Fillets
  2. 4 Tbsp. MOJAVE SEASONING
  3. 1 Green onion- chopped (garnish)
  4. 1 Tsp. fresh dill, chopped (garnish)
Instructions
  1. Preheat oven to 350 ⁰. Coat Mahi Mahi fillets with Mohave Seasoning. In a large skillet heat oil to medium heat. Place fillets in skillet and brown 1 – 2 minutes on each side. Remove fillets and place in baking dish. Bake for 10-12 minutes, or to desired doneness. Garnish with onions and dill.

Ingredients
  1. 4 (8 to 10 x. each) grouper fillets
  2. 3 Tbsp. GALIBA seasoning
  3. 4 Tbsp. Extra virgin olive oil
  4. 2 green onions, chopped
  5. 1 lemon, juiced
  6. 2 Tbs. red bell pepper, chopped (garnish)
  7. 1 Tbsp. black olives, chopped (garnish)
Instructions
  1. Place grouper fillets in a shallow dish. In a small bowl, combine remaining ingredients except red bell pepper and olives. Mix well. Pour half of the GALIBA marinade over the grouper. Let stand for 10 minutes. Preheat grill for 5 minutes on high heat, reduce heat to medium. Place fillet on grill and cook 4-5 minutes on each side. Baste both sides with remaining GALIBA marinade while cooking. Remove from heat and sprinkle red bell pepper and black olives over fillets.

National Pretzel Day

Hey everyone, it’s Friday…and National Pretzel Day! Yessss! Here are some interesting tidbits that you probably didn’t know about pretzels (courtesy of KitchenProject.com):

  • As early as 610AD at a monastery somewhere in Southern France or Northern Italy, where monks used scraps of dough and formed them into strips to represent a child’s arms folded in prayer. The three empty holes represented the Christian Trinity. 
  • Probably two of the most fascinating things about the pretzel is it was served on Easter with 2 hard boiled eggs and hidden around the farms, for the kids to find. This very likely was the forerunner of the Easter egg hunt. Weddings in Europe for a time used the tradition of the bride and groom tugging at a pretzel like a wishbone, the larger piece assured the spouses fulfillment of their wishes.
  • How did the hard pretzel spring into existence? Skip ahead to late seventeenth century Pennsylvania. A baker’s helper fell asleep tending pretzels baking in the hearth. When he awoke, the flames had died, he believed the pretzels hadn’t cooked long enough and started the fire up again. When the Master Baker came in, he was furious that an entire batch of pretzels wasn’t fit to eat. In the process of throwing them out, he tasted one and realized he was on to something big! Not only did he like the taste of these delicious crunchy morsels but realized due to the moisture being baked entirely out, that freshness was preserved and they would keep longer to sell.

Hungry for preztels? One of our favorite ways to enjoy these yummy, salty creations in any shape is  our Dip-idy Dill Dip Mix. Just add 1 cup of Mayo and 1 cup of Sour Cream to the mix and it’s ready to go!
