It’s also an opportunity to illustrate U.S. fisheries successes and challenges as we turn the corner on ending overfishing and begin to rebuild fish stocks. There are amazing stories to tell.

Ingredients
  1. 4 (8-10) Mahi Mahi Fillets
  2. 4 Tbsp. MOJAVE SEASONING
  3. 1 Green onion- chopped (garnish)
  4. 1 Tsp. fresh dill, chopped (garnish)
Instructions
  1. Preheat oven to 350 ⁰. Coat Mahi Mahi fillets with Mohave Seasoning. In a large skillet heat oil to medium heat. Place fillets in skillet and brown 1 – 2 minutes on each side. Remove fillets and place in baking dish. Bake for 10-12 minutes, or to desired doneness. Garnish with onions and dill.

Ingredients
  1. 4 (8 to 10 x. each) grouper fillets
  2. 3 Tbsp. GALIBA seasoning
  3. 4 Tbsp. Extra virgin olive oil
  4. 2 green onions, chopped
  5. 1 lemon, juiced
  6. 2 Tbs. red bell pepper, chopped (garnish)
  7. 1 Tbsp. black olives, chopped (garnish)
Instructions
  1. Place grouper fillets in a shallow dish. In a small bowl, combine remaining ingredients except red bell pepper and olives. Mix well. Pour half of the GALIBA marinade over the grouper. Let stand for 10 minutes. Preheat grill for 5 minutes on high heat, reduce heat to medium. Place fillet on grill and cook 4-5 minutes on each side. Baste both sides with remaining GALIBA marinade while cooking. Remove from heat and sprinkle red bell pepper and black olives over fillets.

Ingredients
  1. 1 Teaspoon canola oil
  2. 2 Tablespoons Instant Gourmet Grande Southwest seasoning, divided
  3. 1/2 Teaspoon black pepper, divided
  4. 2 Pounds pork tenderloin, trimmed and cut into 1 inch pieces
  5. 2 Cups onion, chopped
  6. 2 Tablespoons jalapeno peppers, chopped and seeded (about 1)
  7. 1/2 Cup dry white wine
  8. 3 Cups chicken stock
  9. 2 Teaspoons dried oregano
  10. 1 Teaspoon ground cumin
  11. 2 Cups tomatillo green chile salsa
  12. 1/2 Cup fresh cilantro, chopped
  13. Lime wedge, for garnish
Instructions
  1. Heat oil in large Dutch oven over medium-high heat. Sprinkle 1 tablespoon Instant Gourmet Grande Southwest seasoning and 1/2 teaspoon black pepper over pork tenderloin. Place pork in pan and cook 8 minutes, or until browned. Remove pork from pan.
  2. Add oinion, garlic and jalapeno pepper to pan and saute for 5 minutes. Return pork to pan. Deglaze pan by adding dry white wine and scraping up any browned bits. Add remaining 1 tablespoon Instant Gourmet Grande Southwest seasoning, 1/2 teaspoon black pepper, chicken stock, oregano, cumin and tomatillo green chile salsa. Bring to boil, cover and cook for 15 minutes. Right before serving, stir in cilantro and garnish with lime wedges. Serve with crispy tortilla chips.

Ingredients
  1. 1/4 cup olive oil
  2. 2 tablespoons white wine vinegar

  8. 4 (12 inch) bamboo skewers, soaked in water 30 minutes
Instructions
  1. In gallon food storage bag, combine olive oil, vinegar and 2 tablespoons seasoning. Add chicken and vegetables; toss well to coat. Marinate in refrigerator for 10-30 minutes. Remove chicken and vegetables from marinade; discard marinade.
  2. Alternately thread chicken and vegetables onto each skewer. Lightly sprinkle skewers with remaining seasoning.
  3. Prepare grill. Using direct heat cooking method, arrange kabobs on grill rack 4-5 inches over medium-high heat. Grill, uncovered, until chicken reaches 165 F (10 to 15 minutes), turning frequently.

  1. Serving suggestion: Serve kabobs with couscous and fresh fruit.

National Pretzel Day

Hey everyone, it’s Friday…and National Pretzel Day! Yessss! Here are some interesting tidbits that you probably didn’t know about pretzels (courtesy of KitchenProject.com):

  • As early as 610AD at a monastery somewhere in Southern France or Northern Italy, where monks used scraps of dough and formed them into strips to represent a child’s arms folded in prayer. The three empty holes represented the Christian Trinity. 
  • Probably two of the most fascinating things about the pretzel is it was served on Easter with 2 hard boiled eggs and hidden around the farms, for the kids to find. This very likely was the forerunner of the Easter egg hunt. Weddings in Europe for a time used the tradition of the bride and groom tugging at a pretzel like a wishbone, the larger piece assured the spouses fulfillment of their wishes.
  • How did the hard pretzel spring into existence? Skip ahead to late seventeenth century Pennsylvania. A baker’s helper fell asleep tending pretzels baking in the hearth. When he awoke, the flames had died, he believed the pretzels hadn’t cooked long enough and started the fire up again. When the Master Baker came in, he was furious that an entire batch of pretzels wasn’t fit to eat. In the process of throwing them out, he tasted one and realized he was on to something big! Not only did he like the taste of these delicious crunchy morsels but realized due to the moisture being baked entirely out, that freshness was preserved and they would keep longer to sell.

Ingredients
  1. 4 Tbsp. canola oil
  2. 1 cup coconut milk
  3. 4 garlic cloves, chopped
  4. 4 tbsp. JAIPUR seasoning
  5. ¼ Tsp. saffron
  6. 1 pound lamb cubed (1 inch cubes)
  7. 1 medium onion, chopped
  8. 1 Tbsp. fresh ginger, chopped
  9. 1 medium tomato, chopped
  10. 2 Tbsp. Cilantro, chopped
  11. 2 Tbsp. fresh mint leaves chopped
Instructions
  1. In a medium skillet, add oil, onion, ginger and garlic. Sauté over medium heat until soft. Add lamb and Jaipur seasoning, stir for 5 minutes. Add coconut milk, tomato, and saffron. Cover and simmer over low heat for 1 hour or until meat is tender and sauce has thickened. Remove from heat, add mint and cilantro. Let stand for 10 minutes, serve with rice or roti.
